What side should i make with this meal: Linguine with Butter, Pecorino, Arugula and Black Pepper?
I'm making Linguine with Butter, Pecorino, Arugula and Black Pepper.
Ingredients
Salt
1 pound linguine
1/4 cup (1/2 stick) butter, room temperature
1 1/4 cups very finely grated Pecorino Romano
1 1/2 teaspoons freshly ground black pepper
1 cup coarsely chopped arugula
Directions
Bring a large pot of salted water to a boil over high heat. Add the linguine and cook until it is al dente, stirring frequently, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
Immediately toss the hot pasta in a large bowl with the butter to coat. While tossing the linguine, gradually sprinkle the cheese, pepper, and enough of the reserved cooking liquid evenly over the linguine to moisten. Add the arugula and toss to combine. Season the pasta, to taste, with salt. Divide the pasta among 6 plates and serve.
Pretty simple pasta dish so i wanted to make a simple side to go along with it. Just a salad or something like that. any ideas?
What a great dish! Seriously, if I wasn't half way done with my Chili, I'd be in my car, headed to the store to make this recipe! The first thing that comes to mind is Roasted Vegetables, like Zucchini, Squash, Onion, Mushrooms, Asparagus (leave whole), Red Peppers, Grape/Cherry Tomatoes, Broccoli. Cut your veggies into 1" pieces and put a single layer onto a large baking sheet. Drizzle with some Olive Oil, light butter, salt, pepper, garlic, crushed red pepper. Toss to coat and put into the oven at 425 for about 1/2 hour (depending on how much you have) but when the tomatoes start bursting, it's done. Remove pan and throw on some Scallions, fresh Basil and Parsley and it's done! Your dish is so light and flavorful that it could support and compliment this heavier vegetable dish that will not taste heavy at all! But, that's just what I think. Hope this helps you out tonight to compliment your already wonderful dinner!
